These cupcakes are vegan and gluten-free, but can be made paleo or vegetarian if you wish to sub chia seeds for egg or gluten-free flour for paleo. It is up to you!
*I made these for a crowd of people, and nobody could tell that they were vegan or gluten free, they just happily gobbled them up.
I made the batter in a blender and poured straight into mini cupcake pans, making these extra easy to prepare;)
Prep time: 10 minutes or less
Bake time: 10-15 minutes
Yields 12 regular cupcake or 24 mini cupcakes
