Try these easy to make Jnantik Mayan Seed Chocolate Chip Brownie Bites! (They are highly nutritious, but nobody will be able to tell)
Can you say delicious and nutritious all in one sweet little bite? The Mayan Seed added to this recipe is high in Iron, Magnesium, Calcium, Potasium and Antioxidants, making it a nutrient powerhouse for you.
These cupcakes are vegan and gluten-free, but can be made paleo or vegetarian if you wish to sub chia seeds for egg or gluten-free flour for paleo. It is up to you!
*I made these for a crowd of people, and nobody could tell that they were vegan or gluten free, they just happily gobbled them up.
I made the batter in a blender and poured straight into mini cupcake pans, making these extra easy to prepare;)
Prep time: 10 minutes or less
Bake time: 10-15 minutes
Yields 12 regular cupcake or 24 mini cupcakes
(This means you can go from brownie craving to eating a brownie in less than 30 minutes...that is my style!)
I have been cold brewing my Jnantik Mayan Coffee Alternative these days and the results have been fantastic. I do not like to put the Mayan Seed to waste so I decided to make a chocolate cake with the leftover seed. The results? Nothing short of amazing.
· 1 cup Jnantik Mayan Coffee Alternative, Jnantik Mayan Mother’s Tea or Jnantik Mayan Superfood Powder
· 1 cup of coconut oil
· 1 cup of maple syrup or sweetener of choice
· 1 tsp of vanilla extract or a pinch of ground vanilla bean
· 2 eggs or 2 chia eggs (if vegan)- make these by first soaking 2tsp of chia seeds in ½ cup of water and later
blending the mix into the batter (if you do not make the batter in a blender like I did, make sure to at least
blend the chia seed and water once they have soaked for at least a few minutes)
· 1 cup of cocoa or cacao powder
· ½ to 1 cup of rice flour (or flour of choice)
· A sprinkle of sea or himilayan salt
· 1 tsp of baking powder
Preheat the oven to 350 degrees F.
I like to make my chocolate cake batter in the blender. I first added the cup of leftover Mayan Seed that had been soaking in water overnight. I drank the beverage and blended the seed. You can blend it with some of the tea or water to get it going. I then added in a cup of coconut oil, a cup of maple syrup and the vanilla. If you are going to make this cake vegan, soak 2 tsp of chia seed in ½ cup of water. Blend these in with the mix until everything is fairly smooth. If you are not making the cake vegan, add two eggs to the blender and pulse for just a moment, you do not want them to be hot and cook in the batter before adding to the oven. Next, add 1 cup of cocoa powder and sprinkle in ½ to 1 cup of rice flour (or almond flour or whichever flour you prefer depending on your dietary needs i.e. gluten free or paleo) until you reach the desired consistency. You want the batter to be fairly runny, but not watery and not too thick. Add a pinch of salt and 1 tsp of baking soda or powder to the mix, pulse until smooth (just a few moments) and then pour into an oiled cake pan. Put it into the oven for 30 minutes or until you can stick a toothpick into it and it comes out clean.
Take out, let cool, frost if you would like, and enjoy a heavenly nutrient dense superfood chocolate cake!
Have you had the pleasure of sipping on a cup of Jnantik Mayan Coffee Alternative or Jnantik Mayan Mother’s Tea? Both products have one simple ingredient: the roasted and ground Mayan Seed. The Mayan Seed is wild-harvested in the pristine mountains of Mexico from the tall and magical Brosimum Alicastrum Tree. This tree grows in the richest soil I’ve seen and touched. The ground is lush and thriving with endless green native plants and trees. That being said, the Mayan Seed that grows in this soil is rich in nutrients we typically miss out on, like Magnesium, Iron, Calcium, Potassium and Antioxidants. It is also high in fiber and protein and ALKALIZING to our body!
The Modern American Diet is filled with acidic foods, and coffee is one of them. Have you ever noticed how coffee can give you a huge stomachache? In general, we want our body chemistry to be more alkaline and we need more alkaline foods in our diet. WHY? There are many reasons. One of them being that when your blood and cellular fluid is acidic, your body will have to steal minerals like magnesium, calcium and potassium from your bones and minerals, leading to osteoporosis and arthritis. Another reason to eat more alkaline foods is that infection will not grow in an alkaline environment, so the more alkaline you eat, the better your health, and MUCH less sick days you will have to go through. Other benefits of alkaline foods include balanced blood sugar levels, improved heart health, clear and supple skin, weight loss and improved digestion and more energy (1)! That all sounds pretty amazing, right?
Try Jnantik Coffee Alternative for yourself and let me know how it makes you feel. Once you start drinking this Magic Mayan Seed Elixir, your body will be begging for more. Not only will your body be thanking you for replenishing much needed nutrients, but it will also be glad to create a more alkaline environment, AND the taste is fantastic! Especially when you add your favorite milk and sweetener (I like raw honey and coconut milk). Happy sipping!

The picture above is of two Iced Mayan Seed Lattes: I added the Mayan Seed (Jnantik Mayan Coffee Alternative or Jnantik Mayan Mother's Tea) to hot water and let it steep and cool down for ten minutes. Meanwhile, I blended 1 cup of raw almonds (which were soaked overnight) with 2 cups water, a dash of vanilla bean and 2-3 dates. I strained the milk, mixed with the Jnantik Mayan Coffee Alternative that I had prepared, and poured over ice. Yum!

Can you say Honey Hemp Milk Chai Mocha Mayan Seed Latte? This morning I served them up for the whole family and let's just say it's been a great Monday so far
✨ I started off with a small pot of hot water and added Jnantik Mayan seed coffee alternative, cacao powder and chai spices. While that was steeping, I blended some hemp seeds with water and honey to make the honey hemp milk creamer. I then added the milk to each cup, poured the tea into a cast iron teapot with strainer and poured the delicious elixir over the milk. Pure bliss, I tell ya✨
This is just one of the many dreamy ways that you can prepare the Jnantik Mayan Coffee Alternative or Jnantik Mayan Mother's Tea!
